Hing plant, scientifically known as Ferula assa-foetida, is a perennial herb native to regions of Iran and Afghanistan. It belongs to the carrot family (Apiaceae) and grows up to 2–2.5 meters tall, with a thick, fleshy taproot and large, feathery leaves. The plant produces small yellow flowers arranged in umbrella-shaped clusters called umbels. Hing spice is obtained from the dried latex (resin) extracted from the roots and stem of the plant. This resin has a strong, pungent smell when raw but develops a pleasant, onion-like flavor when cooked. The plant thrives in dry, sunny climates with well-drained soil. Hing is widely used in Indian cooking as a flavoring agent and is also valued for its medicinal properties, especially for aiding digestion and reducing bloating and gas.
